Throughout the Years
peninsula The Spruce Goose Cafe first took flight as a humble fly-in stop for coffee and pie. In 1986, the restaurant was purchased by Patty,
a pilot who owned and flew an Ercoupe. Her passion for aviation kept her in the skies, even during business hours. Under her
floors care, the care quickly became a unique gathering place where trust and community were at the heart of the experience. Often
operating on the honor system, they would hang a “Gone Flying” sign, and customers would leave money on the counter for their
pie and coffee. Through the years, the cafe changed hands, with several owners continuing its legacy. Among them was Ila Bishop,

experience it is now. Ila’s daughter and her business partners, Jeannie Sather and Janet Russ, took over, and they ran the restaurant
together for 11 years.

into ownership until they visited the care. Over lunch, they fell in love with the place: its cozy charm, welcoming atmosphere, and

On July 1st, 2024, The Spruce Goose Cafe began a new chapter as it was passed into the hands of three long-time employees,
continuing its legacy as a women-owned restaurant, rooted in tradition. The original pie recipe has once again been lovingly
passed down. Each pie is made with frozen Oregon berries, chosen for their year-round consistency and flavor, and features a
light touch of sugar to complement the fruit. It’s a top priority to prepare the pies the same way, preserving the flavor, quality,

Menu! Port Townsend Aero Museum
The Port Townsend Aero Museum, located at Jefferson County Airport, opened in 2001 thanks to founders Jerry and Peggy
Thuotte, two retired United Airlines employees passionate about antique aircraft and mentoring teens through aviation. They
retired in 2016, and Mike Payne, who started as a volunteer in 2002 and became the museum’s first employee in 2004, stepped
into the role of director.
Today, Mike carries on their mission, offering teens hands-on aviation experience to help them grow into responsible young
adults. The museum’s youth volunteer program currently includes 17 teens who volunteer weekly and are also training for their
Private Pilot’s License, completely free for them and their families.
We’re proud to support our neighbors at the Port Townsend Aero Museum, a community-run nonprofit that keeps aviation history
alive and inspires future generations through generous local support and dedicated volunteers.
Bring your receipt from the restaurant to the museum and enjoy a special discount on admission!
